Shredded Cafe Rio Pork
3 lbs pork
16 oz. bottle of chunky salsa (use blender so chunks are gone)
1 can Coke or Dr. Pepper
1 cup brown sugar
Place all ingredients in a crock pot and cook on low for 6-8 hours. Shred pork with forks. Leave it on low until ready to serve.
Café Rio Dressing Recipe
1 package Hidden Valley Ranch seasoning packet
1 cup mayo (light mayo, or plain low fat yogurt)
1 cup cilantro, chopped
2 cloves garlic, chopped
3 tomatillos, peel off paper and chop
1/2 cup buttermilk, to consistency you want
Mix all ingredients together in blender/food processor.
